Uncle Bill's Vegetarian Minestrone Soup

A hearty and healthy soup. Excellent on chilly days. Very easy to prepare.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Heat oil in a large saucepan over medium-high heat.
  2. 2
    Add chopped onion and saute' for 4 minutes or until just lightly browned.
  3. 3
    Add water, zucchini, carrots, canellini beans, celery, basil, oregano salt, pepper, tomatoes and garlic.

    Bring to boil; reduce heat, cover and simmer on medium-low heat for 25 minutes, stirring occasionally.
  5. 5
    Add macaroni, cover and cook an additional 10 minutes.
  6. 6
    Serve hot.

Don't know what I did wrong, perhaps having to substitute green beans for carrots, but it was utterly flavourless for me too.

    Very very good! I followed the recipe to a 'T'', except I added a little more macaroni and some corn starch to thicken it up. Simple, low cal, low sodium and delicious!

    Excellent minestrone and sooo easy. My kind of recipe. Hard to believe you can have so much flavor in just 40 minutes but it's true. Used broth instead of water but otherwise didn't change a thing.

    This is just the flavor I was looking for in a minestrone soup when I was searching the web for a recipe. It tastes so much like the one at a local cafe that I like. I might add cubed red potatoes next time.
