Colorful and a delicious side dish or main dish.

SERVES 7 (change servings and units)

Ingredients

Directions

    In a saucepan, cook and stir onion and garlic in hot oil until tender.
  2. 2
    Add the broth and spinach; cook and stir frequently until the spinach thaws.
  3. 3
    Bring mixture to a boil and stir occasionally.
  4. 4
    Add in couscous; stir to combine.
  5. 5
    Cover, remove pan from heat, and let stand 5 minutes or until liquid is absorbed.
  6. 6
    Add remaining ingredients; stir to combine.
  7. 7
    Serve immediately.

Another home run here! This was so much better than I'd even hoped it would be!!! I used extra garlic (I'm crazy like that!), fresh spinach, the juice of one whole lemon and used untoasted pine nuts (all I had on hand). I topped it with Feta rather than parmesan...TO DIE FOR!!! Will eat this one again lots!!! Thank you for posting!

    This was so delicious and simple! I used fresh spinach, and replaced the pecans with toasted pine nuts since that's my preference. I also added a sprinkling of feta cheese at the end, and WOW! I brought some for lunch today and I can't wait to eat it My favorite couscous I've ever made, thanks so much for posting!

    This was wonderful...I made this for dinner tonight, and everyone just loved it...I made as directed, only I used a bit more onions and garlic than called for, after I added some crumbled feta cheese along with the Parmesan...what a delicious side dish, spinach is one of our favorite veggies, but I have never though of adding it with couscous, what a super combination!...this is a keeper. Thanks Nurse Di for posting, I will make this again...KC

    Wow! This was amazing and so easy to make! I added more garlic and onions, and also added some chopped up chicken thighs for a heartier meal. I used 1/2 cup of parmesan and toasted pine nuts instead of pecans. We'll definitely be making this one again! Thank you for your recipe!
