    Preheat oven to 400 degrees.

    Combine oats, flour, cinnamon, baking powder, and baking soda.

    Add brown sugar, oil, egg white, milk, and applesauce.

    Fill muffin tins almost full.

    Bake 20 minutes.

Tasty! I made mini muffins, with the intention of giving them to my 15 month old daughter, but I think I'll end up eating most of them I used whole wheat flour, a whole egg, skim milk, replaced the oil with applesauce, and used applesauce I got from a local orchard (which is sugar free and has added spice). I think the extra spice make them much more flavorful than with the cinnamon only. So much healthier without all that butter. And I feel better giving them to my little girl knowing they're better!

    These muffins are nice and moist, but for my taste they were pretty bland. So I made a second batch, doubled the amount of cinnamon and added 1/2 tsp freshly grated nutmeg. I enjoyed them much more after that.

    I found if you do not want to add the oil, you can add that much more applesauce; tastes great and less calories
