Bacon Wrapped Chicken (Oamc)

Recipe #79944 | 1¼ hours | 25 min prep | SERVES 12 (Change Servings)

RECIPE BY: Tish

This is another great way to make something great ahead of time to thaw as needed or eat right now with little effort!

Posted on: Dec 31, 2003

Ingredients

  • 12 boneless skinless chicken breast half
  • 2 (8 ounce) cartons chive & onion cream cheese
  • tablespoons butter
  • salt
  • 12 slices bacon
  • Directions

    1. 1
      Flatten chicken to 1/2" thickness.
    2. 2
Spread 3 tablespoons cream cheese over each chicken piece.
    3. 3
Dot with butter and sprinkle with salt; roll up.
    4. 4
Wrap each with a bacon strip.
    5. 5
Place, seam side down, in a greased pan.
    6. 6
Bake, uncovered, at 400F for 35-40 minutes or until juices run clear.
    7. 7
Broil 6 inches from the heat for 5 minutes or until bacon is crisp.
    8. 8
If you are making these ahead for future use, freeze these uncooked on a cookie sheet in your freezer. When solid, wrap and put in a ziplock bag or vacuum seal desired quantities.
    9. 9
To cook from frozen state, thaw before cooking and follow directions above.

I was so pleased with how the chicken turned out that I've made it twice now. I did not add the butter, but I did add salt. I also used turkey bacon and it was yummy! Great OAMC meal!

Tish, you obviously have another winner on your hands! I made this last week, but had far too many so I froze the rest fully cooked. I just flash froze them on a cookie sheet and then put them in a zip-lock bag. We thawed them out last night and they were just as great as the first time around! So they DO freeze well when pre-cooked. Thanks for a great addition to my OAMC cookbook!

This is delicious! I made it with chicken tenders and it was easier than you would believe. I cut the bacon strips in 1/2 and layed them lengthwise along the tender instead of wrapping them around. VERY VERY tasty. Thanks for posting this.
