Best Twice-Baked Potatoes

Family favorite - tried and true - the only recipe we use.

SERVES 4 (change servings and units)

Ingredients

Directions

    Microwave (or bake in oven at 400 for 1hr) the potatoes until done.
  2. 2
    Allow to cool a bit.
  3. 3
    Slice about a 1" strip of the skin off the top of each potato.
  4. 4
    Carefully scoop out the pulp, placing in a large bowl, and leaving potato shells intact.
  5. 5
    Mash the potato pulp along with the margarine.
  6. 6
    Add milk, sour cream, cheese, salt and pepper; combining well.
  7. 7
    Spoon the mixture back into the potato shells, piling high.
  8. 8
    Top with the crumbled bacon or bacon bits.
  9. 9
    Bake at 400 for 15 minutes.

Great quick potato dish. Very tasty and creamy. I halved the recipe this time, but I read in some other reviews that these freeze well, so next time I'll make a lot and freeze the extras. Thanks.

    These were delicious although we didnt manage to get them back in the skins as are skins were far too thin. Instead we made large potato cakes from them and baked them that way. Really were the nicest potatos we have had and Id say it was even nicer this way rather than back in the skins.

    THE BEST twice baked potatoes I've ever had. I loved this, and my guest raved as well. Really simple to put together, and I wouldn't change a thing. Make these potatoes.
