This recipe comes from my Betty Crocker cookbook. This is the only pancake recipe I will use because they are so light and fluffy.

SERVES 1 , 9 4inch pancakes (change servings and units)

Ingredients

Directions

  1. 1
Beat eggs with whisk until fluffy.
  2. 2
Beat in all remaining ingredients until smooth.
  3. 3
    Heat griddle or pan.
  4. 4
Pour about 3 tablespoons of batter in pan and cook until pancake is puffed and dry around the edges.
  5. 5
Turn and cook other side until golden brown.

My Kids an DH loved 'em (me too)! This is now my pancake recipe for life. I added a tsp of vanilla just because I like the aroma and flavor and they turned out perfect!

This is the only pancake recipe I use; the taste and texture are great! I always add about a 1/2 teaspoon of vanilla and 1/2 teaspoon of cinnamon to the batter (per single batch) before cooking for a wonderful aroma and flavor. I also almost always double or triple the recipe so that I have some in the freezer at all times for a quick breakfast.
