This came from our very close friend who has a catering business and caters for people with various tastes.

1 large cake (change servings and units)

Ingredients

Directions

    Mix fruit and orange juice and soak overnight.
  2. 2
    Next day add 2 cups self raising flour.
  3. 3
    Put in tin and bake for 1 or 2 hrs at 140-150°C.
  4. 4
    (Scrumptious) (Use skewer to test finish time. When skewer comes out clean cake is done).

I was so glad to find this recipe- I was searching for an egg-free cake as my mother in law is allergic to them and I was making them a cake for their 50th Wedding anniversary. The recipe worked brilliantly, is very easy and won lots of compliments! I doubled the quantity which makes a huge cake (serves about 30) but used only 3 cups of orange juice, as 4 made it too wet. Thank you for posting! Sarah

    Tastes a bit like Christmas cake - if that takes your fancy. Don't forget to dilute the orange juice unless you like REALLY tangy cakes!! Easiest recipe I've ever done.

    Well, I have to admit to being somewhat surorised that this cake works but it does work. And as such it is an excellent option for those with allergies who normally cannot eat regular fruit cake. Instead of one big cake I used ramekins which worked well. I baked these for 40 minutes in my convection oven.

    I could not get over how moist and tasty this cake was. nothing is lost in the flavour and my friends did not believe there is no dairy produce in it. very easy receipe to do.
