A great appetizer for parties. You can keep these warm in a small crockpot. Can be prepared ahead and refrigerated, then easily reheated just before serving.

32 appetizer meatballs (change servings and units)

Directions

    Preheat oven to 350F.
  2. 2
    Mix together all ingredients for meatballs.
  3. 3
    Shape into approximately 32 meatballs.
  4. 4
    Place meatballs on a baking pan, and bake for 15-20 minutes or until cooked through.

    While meatballs are cooking, cook onion in oil in a large skillet until tender.

    Stir in coconut milk and peanut butter, mixing until smooth.
  7. 7
    Add remaining ingredients and mix well.
  8. 8
    Reduce heat and simmer until sauce thickens.

    Add meatballs to sauce and gently stir to coat meatballs.

    Cook 2-3 minutes more or until dish is heated through.

I made this as a meal because my husband loves the peanut sauce at our local Thai restaurant. I made the mistake of using coconut cream instead of milk so the sauce got very thick, but they were still a hit. Thanks

    I put this together for a New Year's party. The sauce is great! I added a little more cayanne to give it more kick (1/2 tsp.total) Also I used Chicken tenders instead of the meatballs. Very good and easy to make.
