This is quick and easy! Chilling makes handling these easier. Option for a lemon glazed cookie--all you have to do is in place of the water use the frozen lemon concentrate for a real tart cookie and/or use lemon cake mix. Then mix a bunch of powdered sugar with the frozen lemon contentrate thats at room temperature for a nice tart icing! Pictures uploaded here on Nov 27 using carrot cake mix, 1/4 cup coconut, 1/4 cup chopped nuts then sprinkled with cinnamon sugar before and after baking. Dec 10 used chocolate cake mix and chocolate mint chips.

    Mix all together.

    Shape in 1" balls and roll in powdered sugar(optional).

    You may want to chill dough before rolling. Place on parchment lined baking sheet.

    Bake 10-12 minutes at 375°F.

This turned out GREAT! I chose a Dark Chocolate Fudge cake mix and used Andes Creme De Menthe baking chips.... wow did this turn out good! I didn't use parchment paper, just used Pam. Fantastic recipe!

    For a cake mix cookie, these are outstanding. For an over all cookie, I'd say they are more of a 3 or 4 star recipe. But hey - the whole reason we make cake mix cookies is because they are so much quicker and simpler than the standard cookie recipes. I used a devil's food cake mix and semi sweet chocolate chips. My family really loves them. Thanks so much for posting! This is a keeper! Made for the I Recommend Tag Game.

    This is an awasome recipe. So easy and kids of all ages can make them,we did many different cake mixes with all kinds of chip and stuff added. We did a bunch up befor X-mas and froze it. I wraped it waxed paper and then in glad wrap(I rolled it like a log)Then on baking day I just took it out cut into large slices and each slice into 1/4 or 1/2 rolled them into balls. You can do anything with this recipe. Nuts,chips,dryed fruit,roll them in what you like..there is no limit. This is one of those recipes you can play with and be your own artist. Great to do with kids and just let them go.This one will be passed down to all my busy daughters,sons, daugher inlaws,son inlaws,grandkids,pretty much the whole family. And here is a tip..If you cook cookies a little to long or they set around the house for a few days and get alitte cruncy and hard.Put them in a big zipplock bag with a slice or 2 of bread and it will sofen them up by the next day. Thank you Rita L. for the great gift of this recipe. With life so busy it is nice to have easy things to make that taste like they are made from made from scrach. Love it ....Sheila

    I made these with a Funfetti cake mix and coconut. They are EXCELLENT. They taste a lot like a sugar cookie, but much better. I also added some more powdered sugar on top of them after they baked. I made these with a Strawberry cake mix and coconut, too. Those were so-so. I wouldn't make them again. But, the first....Wonderful! Everyone loved them.
