Fruit and Nut Refrigerator Cookies

Recipe #76174 | 30 min | 20 min prep | 96 cookies (Change Servings)

RECIPE BY: Dorel

This is a great looking cookie on a tray of mixed cookies. Good at christmas or for bazaars or church fellowships. Or just for cookie lovers everywhere. Don't know where the recipe came from. I've had it for years.

Ingredients

  • 2 1/2 cups flour
  • teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup shortening
  • 1/2 cup margarine or butter

  • teaspoon vanilla
  • 1/2 cup chopped walnut or pecan
  • cup chopped candied cherry or mixed candied fruit
  • Directions

    1. 1
Combine flour, baking powder, baking soda and salt; set aside.
    2. 2
Cream shortening, butter or margarine and sugar until creamy. Add eggs and vanilla and mix thoroughly, I use my electric mixture usually on high power to really whip it up good.

Stir flour mixture into creamed mixture.
    4. 4
      Mix well.
    5. 5
      Add fruit and nuts.
    6. 6
Chill for at least 1/2 hour for easier handling.
    7. 7
Shape dough into smooth rolls about 1 1/2 inches in diameter.
    8. 8
Wrap in waxed paper or clear wrap and chill overnight or until firm.
    9. 9
Slice with sharp knife in 1/4 inch slices.
    10. 10
      Place on ungreased cookie sheet.
    11. 11
Bake at 375°F for 8-10 minutes or until golden.

These cookies were the best I've ever made. Our youth group just ate them up. I was really surprised at how good they tasted without any chocolate in them! I've already had requests to make them again as soon as possible. I chopped up some candied apricots and used some very finely chopped walnuts and the taste blended perfectly. Plus being able to mix the dough the night before and just slice and slide them in the oven made the recipie even more attractive. I know I'll be making lots more of these.

I made these for my Christmas trays. They were easy to make and the colors were pure Christmas. I made a fresh batch one morning as I was getting ready for work and the guys at work devoured them in no time. I will be adding these to my Christmas cookie cook book!

I made these with the walnuts and they are so good. I almost don't want to share them with anyone. Thanks for posting the recipe.
