Peanut Butter Marshmallow Fluff Coconut Cookies

Hello everyone!! This is a wonderful twist on your common peanut butter cookie that tastes moist and chewy and delicious with the coconut on top. That is just great to snack on...

    Preheat Oven to 350°F (175°C).

    In a large bowl, cream together the butter, peanut butter, white sugar and brown sugar until smooth and fluffy.

    Beat in the eggs one at time, then stir in the vanilla.

    Combine the flour and baking soda; stir in to the peanut butter mixture.

    Then fold in the marshmallow fluff in just until combined.

    When you drop the cookies by the rounded spoonfuls or use a cookie scooper into the ungreased cookie sheet first put a pinch of coconut flakes on bottom on cookie sheet then place dough on top of coconut then after all your cookies have been drop place a nice hefty pinch of coconut flakes on top of cookie dough then press with fork as you would with regular peanut butter cookies to impress a criss cross with fork.

    Bake for 15 minutes.

I love the idea of adding marshmallow fluff to peanut butter cookies, adds a lovely creamy taste! These were very good - wonder if I could up the fluff and maybe consequently use a bit more flour...? Off to experiment! Thank you for a great recipe!

    These were good, but not spectacular. I was hoping for a different peanut butter cookie, but these tasted just the same. Also, 15 minutes made them too crunchy for my liking. I will try them again with less peanut butter, and more marshmallow cream, and shorten the baking time. We'll see what happens.

    I really didn't like peanut butter cookies until I had these, the marshmallow fluff adds a wonderful taste! I made half a batch in case I didn't like them. I regret it now!!! They're gone!

    Very tasty! I got 26 good sized cookies. Some I did with the coconut on top and pressed down and the others I just used the cookie scoop and didn't flatten. I prefer the ones not flattened without the coconut.The marshmallow adds a nice taste. I will make these again.
