From Chef2Chef e-mail. We've made this twice in a short period of time. Delicious!

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
Cut the lobster tails down the center through the meat but not all the way through the shell.
  2. 2
    Fold over butterfly style.
  3. 3
Combine remaining ingredients and brush over the meat.
  4. 4
Put some foil over your grill and place the tails, shell side down on the foil.
  5. 5
Cook, covered, for about 14-16 minutes until the meat is firm and white.
  6. 6
    Brush occasionally while cooking.
  7. 7
Loosen the meat slightly before serving and brush one last time with the citrus butter.
  8. 8
NOTE: We broiled instead of grilled.
  9. 9
Used a broiling pan with the broiler on low, with the tails about 6 inches from the heat source and watched them the entire time.
  10. 10
We serve with the remaining citrus butter.
  11. 11
You may choose to make extra.

The citrus butter is wonderful. I use it for crab-legs! Thanks!

I used this recipe for the citrus butter. I cooked rock lobster tails and the butter was delicious.

This was delicious. I left the salt and pepper out and substituted onion pwder for the paprika. Then I cooked the tails on a hot grill pan for 15 minutes, turning them every five minutes. They were the highlight of my New Year's Eve dinner w/the hubby. Try them with grilled steak and steamed asparagus. Yumo!

Took your suggestion of using foil on the charcoal grill and these turned out wonderfully. Citrus butter outstanding. Will definitely make again.
