Lemon Rice

This zesty lemon rice is the perfect side dish for your favorite fish dinner.

SERVES 4 (change servings and units)

Ingredients

Directions

    Combine all ingredients EXCEPT lemonpepper in saucepan.
  2. 2
    Bring to a boil, then reduce heat.
  3. 3
    Cover pot and allow to simmer slowly for 20 minutes, or until liquid is absorbed.
  4. 4
    Sprinkle with lemonpepper before serving.

Great rice, especially served alongside fish. I thought the lemon pepper might be a bit much, but it was the perfect amount of seasoning.

    I totally messed this recipe up and came out with mushy rice, but with a deliciously fresh flavor! One child and both adults liked it regardless of the terrible texture. I made it in the rice cooker with brown rice and it just totally didn't work. I'll try it again though, because the flavor was wonderful. The brown rice steamer recipe called for 1 1/4 c. liquid to 1 c. rice. I followed your recipe because it had more liquid, but next time I'll adjust your liquid by only using 3/4c. broth and water. I'll update when it works. Thanks for the delicious flavor!

    This was so good! The balance of the flavors is perfect... surprisingly the lemon is not overbearing at all! I made this to go with Beef Souvlaki, and a Greek Salad. I will use this rice ALL THE TIME! Really, it's awesome!
