Cheese Ball With Everything

This savory variation belongs in every serious cook's repertoire. Serve these to a crowd you want to impress! Caution..This makes alot, the two small balls are as big as baseballs! I have been making these for years from a recipe I clipped from a magazine and they are always a hit. Cook time is chill time.

SERVES 20 , 2 balls (change servings and units)

Ingredients

    Let swiss and cheddar cheeses come to room temperature.

    In a large bowl beat together cream cheese and sour cream till fluffy.
  3. 3
    Beat in swiss cheese, cheddar cheese, onion, undrained pimiento, pickle relish, half of the bacon, 1/4 cup of the pecans, salt and pepper.

    Cover and chill till firm.
  5. 5
    Shape into 1 large or 2 small balls on wax paper.
  6. 6
    In a small bowl combine remaining bacon, pecans, parsley, and poppy seeds.

    Turn mixture out onto clean clean sheet of waxed paper.

    Roll cheese balls in seed mixture to coat.
  9. 9
    Wrap and chill.

    Let stand 30 minutes at room temperature before serving.

    Serve with crackers.

    Lots of flavor going on in this one, but we found they all went well together. Yes, you're right it makes a lot, but it seems to be just as good hours later at room temperature which is good for an open-house type party. The mixture holds in a ball shape well, and is also easy to spread.

    Very, very good, Tweeky! I gave this to friends this Christmas, packed in 1 cup Christmas design canning jars and accompanied by a Christmas themed spreader. Consequently, I just mixed everything (minus the seeds) together and packed in the jars. No muss, no fuss, and everyone raved. (I had to make a second batch for my family, due to the sour looks I got for giving it all away!) Thanks for posting!

    Excellent! I made one large cheese ball to make it easier to Christmas guests to "slice" a wedge for their plates. It worked great! I highly recommend making one, albeit very large, cheeseball if you have many guests or take it to a party. It maintains it's appetizing shape and it makes it easier for your guests. My photo shows just how large our cheeseball was! But, it was the best one I've ever made.
