Prosciutto Wrapped Chicken

This is an easy dish that is quick to prepare ahead and looks really impressive. A great meal to serve to guests too, just increase the quantities as you need to. Goes well with roast garlic potatoes and grilled zucchini and red peppers.

SERVES 2 (change servings and units)

Ingredients

Directions

    Preheat oven to 200 degree Celsius.
  2. 2
    Spread 2 teaspoons mustard over each chicken breast.
  3. 3
    Wrap 2 slices prosciutto around each breast and secure with a toothpick if necessary.

    Place chicken into a small baking dish and bake for 20 minutes or until chicken is cooked through.

    Serve with mixed vegetables.

    I loved this, I did use chicken tenders rather than breasts, but it was still good, I also added just a touch of cheese under the bacon. My father started out liking it and then he didn't care for it, then he did, so I am not sure about him but one of my sisters ate it and loved it also. Thanks for posting.

    Delicious! I added a slice of swiss cheese during the last 5 minutes of baking and am glad I did. That however,is the only thing I would add to this recipe. It is perfect weeknight meal to prepare. So simple.
