Baked Fish Fillets

This is a wonderful alternative to fried fish, coating the fish with butter and baking at high heat is the secret to the success of this recipe --- use meaty fillets of fish for this if possible --- FOR LOW-FAT OPTION; whisk together 2 egg whites with 2 tablespoon cold water, dip the fish into the mixture, allow excess to drip off, use in place of melted butter.

SERVES 4 -6 (change servings and units)

    Set oven to 500° F (bottom oven rack).

    Grease a shallow baking dish (enough to hold all fish without overcrowding).

    In a shallow bowl, combine first 7 ingredients.

    Brush fish fillets with melted butter, then dip into crumb mixture.

    Place in a greased baking pan.

    Bake uncovered at 500°F for 10 minutes, or until fish flakes easily with a fork.

This was just OK for me and my hubby didn't like it much at all but we've always just eaten fried catfish and nothing will ever beat it in our book. I used tilapia fillets and Cajun seasoning along with black pepper and seasoned salt. I did not use a shallow pan which may have affected the crispness of it. I may try and use cornmeal next time and catfish fillets and maybe I'll like it better. It's a good idea though.

    thank you! so easy and delicious! I didn't have garlic powder so I used minced fresh garlic instead. The only change I'll do next time is to omit the salt because it's a bit too salty to my taste thanks again, Kittencal!

    Such an easy recipe and the fish turned out golden and moist. I used sole. I cut the recipe back to two servings, mixed up the whole batch of crumbs cause I know I'll do these ssoon again Thanks KITTENCAL for a keeper

    As usual this is a fantastic recipe.. I used season salt also.. fish was nice and brown plus crispy,, this will be made often, thanks again kitten
