Nigerian Peanut Soup

I love peanut-anything. This is a delicious, nutty soup.

SERVES 2 -4 (change servings and units)

Ingredients

Directions

    Heat the broth to a bare simmer and, in a small bowl, stir together the peanuts and ½ cup of the broth until the mixture forms a paste.
  2. 2
    Stir paste into the simmering broth, add chili peppers, bell pepper and onion, and bring to a boil.
  3. 3
    Simmer, stirring occasionally, for 15-20 minutes, or until the soup thickens to desired consistency, and season to taste.

Very tasty, nutritious, and easy. The little bit of ground peanut crunch was nice. I did a vegan version with a peppersoup spice mix and a little tapioca in place of the beef broth. I would use a tad less hot pepper next time.

    This is really good! I've never really had anything like this and I loved it. It has a wonderful flavor. Made for ZWT4 for the Tastebud Tickling Travellers.

    I halved this recipe perfectly. MMMM! I was sooo not expecting to like this as much as I did. I was pleasantly surprised! I think next time I would try replacing ground peanuts with peanut butter for a smoother soup but this was still quite tasty! Thanks EV!
