Vegetarian Spinach, Cheese and " Sausage" Casserole

This casserole is a simple, easy to prepare, one-dish, meatless meal. Great for brunches. Be sure to drain the spinach really well. For non veggies, you can easily substitute ground breakfast sausage or crumbled bacon if you prefer.

SERVES 6 (change servings and units)

Ingredients

Directions

    Thoroughly mix all ingredients.

    Pour mixture into a greased 9 inch pie plate (I have also used a square casserole dish as well).
  3. 3
    Bake at 350 for about 40 minutes or until center is set.

    Once out of the oven, I usually let it sit for 5 or 10 minutes.

    To serve, either cut into wedges, or squares, depending on what type of dish you used.

Unfortunately, my family did not enjoy this combination of flavors. I used the recommended LiteLife Gimme Lean soy sausage, and my family did not think the seasonings in it worked well with the rest of the flavors in the casserole. We thought the "sausage" might work better in a Thanksgiving stuffing/dressing recipe. It might be better with a different kind of sausage or crumbles. The tomato/basil sausages that tinctoria mentioned seem like they'd go better, if one could find them (we couldn't).

    I really liked this! It was so quick and easy to make, and very filling. I made this with veggie tomato and basil sausages, and I also made one with "real" sausages for the meat eater in the family. It was a hit with everyone. I added a little basil for more flavour, apart from that I followed the recipe exactly. I will be making this again, thankyou.

    OMG! OMG! we loved this! This was the best healthy "comfort" food I've tried! I didn't have any vegetarian sausage so I just used normal hamburger-style veggie crumbles. Terrific, I will make this many times!!

    A new favorite in our house and we are new to the vegetarian diet. It was surprisingly easy to make considering the delicious end result. I didn't change a thing, didn't need to.
