Zucchini Casserole to Die For

Its the time of year for zucchini and neighbors keep sharing their bumper crop with us. The problem is we don't like zucchini! I needed to find another venue other than zucchini bread and muffins. I came up with this recipe and it has been a smash hit with everyone!

SERVES 6 -8 (change servings and units)

Ingredients

    Preheat oven to 350°F.
  2. 2
    In a small bowl, combine cream of chicken soup and sour cream; set aside.
  3. 3
    In a large skillet, melt butter over medium-high heat.
  4. 4
    Add onion and sauté until soft.
  5. 5
    Add grated or diced zucchini and grated carrots.
  6. 6
    Stir frequently until zucchini is soft; about 5 minutes.

    In a large mixing bowl, combine cooked veggies, soup mixture and seasoned stuffing together, stirring gently until well mixed.

    Spread into a lightly greased 13"x9" baking dish.

    Bake at 350°F for 30 minutes.

    To make it more of a 'Main Dish', my family likes it when I add 4 or 5 diced, grilled, boneless chicken breasts to the mix.

    This dish is the only way I can get my family to eat zucchini!

My family LOVED this....each and everyone of my TEENAGE BOYS told me it was their favorite thing that I have made. My 17 yr old son asked for it just three days after I made it the first time and my 22 year old wanted the receipe for his in-laws. This is a smash hit! Thanks!!!!

    This recipe really is to die for! I added some crushed red pepper flakes and two cloves of garlic. Also cut the butter in half and used 1/4 cup of olive oil instead.. and I used fat free sour cream. I also followed the other reviewers suggestion and used corn bread stuffing mix.

    This dish is excellent for the whole family...imagine my amazement when they all came back for seconds and wanted more after it was gone...very subtle hint of zucchini flavor ...tastes just like turkey and dressing ...I used cornbread dressing..Thank you so much for posting this recipe..loved it

    While I liked this, I didn't feel it was extraordinary. I'm not much for soggy veggies. I prefer them crisp tender so I think that's why I was turned off. But I may try this out at my family's Christmas celebration this year. My aunt and grandmother love casseroles and would probably like this one.
