Chunky Chicken Salad

Simple to prepare chicken salad that I make up for sandwiches. We never have left-over chicken, so I microwave chicken just to make this. Very basic but very good! P.S. Celery is listed as optional because my husband hates it...if I am only making this for him, I leave it out!

SERVES 2 -4 (change servings and units)

    In a medium bowl, combine mayo, onions, relish and 2 dashes or so of paprika.
  2. 2
    Add chicken and fold into mayo mixture until well combined.
  3. 3
    Taste and then add salt and pepper as needed.
  4. 4
    Chill well and serve over lettuce or on your favorite bread.
  5. 5
    Note: I microwave 2 boneless chicken breast halves sprinkled with salt, pepper, Italian seasoning, garlic powder and onion powder for 5- 6 minutes for this salad.

    If you are using left-over chicken, you may need to adjust the seasonings in the ingredients list.

I made this up to have for lunches next week. Very good basic chicken salad. I made exactly as written. Will have this on crackers. Thanks.

    Used green bell pepper instead of celery because I had on hand. Grilled chicken using noted ingredients. YUM!!!!!!! Thanks!

    Well I was feeling lazy, it was a very hot day here today, I had a potato salad ready and was looking for something to go with it, this Chunky chicken salad as perfect. I used canned chunky chicken, 12.5 ounces, which was surprizingly good. DH loved the mix, the sweet pickle relish was the topper I think and the paprika, loved the crunch of the celery. It made a very nice/tasty main dish salad with the potato salad and a marinated dish of tomato slices, cucumber slices and onion slices. (As DH put it "with enough chicken salad left over to make a sandwich later") This one will go in the hard copy to use on future hot summer days. Thanks for sharing.
