These tasty muffins are a good way to use up over-ripe bananas and are great for those who are allergic to dairy products as they can be made with either butter or non-dairy margarine. This recipe was developed in the test kitchens of Robin Hood Multifoods.

12 muffins (change servings and units)

Ingredients

Directions

    Combine the first six ingredients in a mixing bowl.

    Mix well.
  3. 3
    Beat together egg, bananas and melted butter or margarine until smooth.
  4. 4
    Add to dry ingredients.
  5. 5
    Stir to blend.
  6. 6
    Stir in cranberries just until combined.
  7. 7
    Spoon batter into prepared muffin pan, filling almost to the top.

    Bake at 375 degrees F for 20 to 25 minutes or until the top springs back when lightly touched.

Awesome muffins!! Followed the recipe as posted and truly enjoyed them! Will probably use applesauce in place of the butter and add some nutmeg next time - there definitely will be a next time!

    I made these last night and at first I wasn't sure about them, but the longer they sat, the better I liked them. I made a few changes--I didn't measure the bananas, just added 6 of them so they might have been a little more moist then they were meant to be, but I loved them! I also added about a quarter teaspoon of fresh grated nutmeg, and the zest of one orange. It made all the other flavors seem brighter. Next time I make these, I will try substituting some of the butter with more bananas or some applesauce, and I'll use 2 egg whites instead of one egg to cut down on the fat content. They're already pretty healthy, though, and they taste great!

    Exactly what I was looking for! I used unsweetened applesauce instead of the melted butter - always do, turns out great and healthier. I also added walnuts, a shot of vanilla and a bit of cinnamon for extra flavour. They turned out great. I think I might add more cranberries next time too. I always have more than enough overripe bananas (I just throw them in the freezer and thaw when I need them) and this is a great alternative to banana bread. Thanks!

    This muffin was exactly what I was craving! The flavours blended together wonderfuly. I followed this to a T, only I added 1 1/2 tbs of cinnamon and some extra cranberries. Thanks for the recipe will definitley use again! Maybe next time I will try some blueberries or orange craisins.......mmmmm....... Thanks again!
