Beef and Broccoli Stir-fry

Beef and Broccoli is a favorite of mine. It's important to take your time, mix well and marinate for the full 3 hours. You wont be sorry!

SERVES 3 -4 (change servings and units)

Ingredients

    In a medium mixing bowl add together the beef strips and soy sauce.
  2. 2
    Mix to be sure all the beef is coated.
  3. 3
    Add the sugar and pepper, stirring for 3 minutes to be sure each piece is evenly coated and sugar is dissolving.

    Add the whipped egg white and slowly stir in the cornstarch, again stirring for 3 minutes to make sure the beef is evenly coated.

    You DO NOT want to see any sugar or cornstarch.

    Cover and let stand in the fridge for 3 hours, stirring well after 1 and 1/2 hours.

    Bring a large pot of water to boil.

    Bring a wok to medium high heat.

    Par boil the broccoli for 1 minute.

    Drain in colander in sink.

    Add 2 T.

    oil and garlic to wok and quickly"mush" around.

    Stir fry the broccoli until tender crisp, around 5-6 minutes tops.

    Remove broccoli to a bowl.

    Add the remaining oil if needed and stir fry the meat until just under done.

    Return broccoli to wok and stir.

    Add the sherry and oyster sauce.

    Stir fry for 1 minute making sure broccoli and beef is thoroughly coated with sauce.

    Serve over hot white rice.

This was a very good recipe! I had to modify a couple things: I didn't have any sherry so I used regular white cooking wine and no oyster sauce so I kinda just threw what I had together tsp of hosin sauce, 2T of soy sauce, and a couple splashes of fish sauce. It came together very easily. I steamed the broccoli, added some snow peas and peppers, over the udon noodles that I was boiling. I also added some ginger and some red pepper flakes to the marinade. Very tender and I will be making it often!! Thanks

    This was absolutely awesome! The beef was also VERY tender! First time that I made a beef stir-fry where the meat wasn't kinda chewy. The long marination is definitely the big key to this recipe. Will use this recipe exclusively from now on. Followed the recipe exactly. Easy and delicious! Served it with steamed Jasmine Rice. You definitely have to try this!

    I followed the recipe to a tee, changed nothing at all. And served it with fried rice and crab rangoons. Only two words come to mind when rating this recipe....ABSOLUTELY DELICIOUS!!! This was better than most I'd had in restaurants. Definately a keeper! Thanks so much for sharing!!!
