Kittencal's Italian Melt-In-Your-Mouth Meatballs (Or Burgers)

These also make fantastic juicy melt-in-your-mouth burgers for the grill, use all ground beef and shape into patties instead of balls ---This meatball recipe goes back over 25 years, place the meatballs into the simmering pasta sauce, they will not only add so much extra flavor to the sauce the meatballs will be melt-in-your-mouth tender, you may of course oven-bake the meatballs for about 25 minutes --- don't be afraid to add in more Parmesan cheese and a little more milk, there is no need to measure exactly, this recipe is pretty much foolproof, leftover cooked meatballs make a wonderful pizza topping just slice thinly and freeze until ready to use

Ingredients

  • 1 1/2 lbs lean beef (or a mixture of beef, pork and veal, I mostly use a mixture of 1 pound ground beef and 1/2 pound pork)
  • large egg, slightly beaten
  • 1/4-1/2 cup parmesan cheese, grated
  • 1/2 cup breadcrumbs (or use enough to hold the meat together)
  • 1-2 tablespoon fresh minced garlic (or use 1 teaspoon garlic powder or to taste)
  • 1-2 teaspoon salt (or to taste, I use 2 teaspoons seasoned salt as I prefer it better than white salt)
  • teaspoon fresh ground black pepper (or to taste)
  • 1/3 cup milk (can use up to 1/2 cup milk)
  • 1/2 teaspoon dried oregano (optional, or to taste)
  • 1/4 cup chopped fresh parsley (or 2 tablespoons dried parsley)
  • Directions

      Mix all ingredients together in a large bowl.

      Shape into small meatballs or patties (at this point you can place on a jelly-roll/baking sheet and freeze to use later, or cover with plastic wrap refrigerate up to 24 hours before using).

      Drop the meatballs into simmering pasta sauce, do not stir for at least 20 minutes or you will risk breaking the meatballs.

      Continue cooking in the simmering sauce for another 20 minutes (depending on how fast your sauce is simmering 40 minutes total should fully cook the meatballs).

      After the 40 minutes cooking time continue cooking your sauce with the meatballs in for as long as desired.

      **note** you may also bake the meatballs at 350 degrees F for 25 minutes or until cooked through.

      IF GRILLING; cook patties over medium-high heat until cooked through.

    WOW!! I have never been a fan of meatballs because they are usually rubbery, I also have never had a great meatball recipe but I thought I'd give these a try. I am so glad that I did!!! I followed the recipe to a tee except I used cream instead of milk. I made these approx. the size of a jacks ball, and I got about 50 meatballs. These just MELTED in your mouth. My whole family loved these, including the SO who doesnt even LIKE spaghetti! LOL Thanx so much Kittencal for sharing this wonderful recipe

    wow, I don't know what the secret to these are but they are truly the best I have ever had. I have simmered my meatballs in sauce before and they did not taste tender like these so it has to be the milk and parmesan cheese?????

    EXCELLENT! I always wanted to cook meatballs, but never had a good recipe. My family LOVES these meatballs. This one is a keeper; a new Sunday tradition. I only used beef and pork and I put the meatballs on an ungreased cookie sheet and baked at 350 degrees for 20-25 minutes and then threw them into a simmering sauce. Thanks for a great recipe!

    I'm adding my high 5 to all the other reviewers. Made these for dinner. WOW! I was not sure that your advice about placing STRAIGHT into the sauce was sound. Silly me! They, indeed, cooked beautifully and then absorbed the sauce nicely. Great flavor and easy to make...another blue ribbon winner, Kitten.
