Artichoke and Chicken Bake

This easy but elegant entree first appeared in "Quick Cooking" magazine. Someone posted this at the Somersize website, which is where I found it. I usually have this over a bed of fried spinach or zucchini ribbons.

SERVES 4 (change servings and units)

    Preheat oven to 375.
  2. 2
    Spray an 11x7 inch baking dish with Pam.
  3. 3
    Salt and pepper the chicken breast halves and place in the dish.
  4. 4
    In a bowl, combine the artichoke hearts, parmesan cheese, mayonnaise and garlic powder; mix well.

    Spread artichoke mixture over chicken breasts.
  6. 6
    Bake, uncovered, 30-35 minutes or until chicken juices run clear.

I also followed Japanese Delights method without the spinach. Next time I would precook the chicken since I was nervous about the chicken cooking and probably over cooked it. That doesn't affect my rating though because that's not part of the original recipe. We really liked it and will make it again.

    I made the version like Japanese Delight and my family LOVED it! I cut up the chicken put the rice on bottom and used FF mayo and added mushrooms. We will be making this again! Thanks for a easy recipe that tastes really rich and yummy!

    This was very good and rich! I added my own twist to this recipe, and turned it into a casserole. I made 2 cups of rice cooked in chicken broth, and made that the bottom layer in a large casserole dish. Ontop of that, I layered the seasoned cubed-up chicken. And ontop of that, I layered the artichoke/mayo/parmesan mixture. I added sauteed onion and spinich to it also. Baked as called for, and it was really good! Did I say this dish tasts sooo rich? I used reduced fat mayo.

    This dish was AWESOME! It is such an easy dish to put together and results in a moist, juicy, tender and very flavorful chicken. We will make this again and again. The only change I made was to season the chicken with cajun seasoning before adding the artichoke topping and sprinkling with additional parmesan and some paprika on top. This provided a beautifully colored top and an outstanding dish overall.
