Stuffed Meatloaf

A family favorite! I sometimes add in a layer of cooked sliced hard-boiled eggs on top of the meat mixture before topping with the stuffing.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Set oven to 350 degree F.
  2. 2
    Grease a 9 x 5-inch loaf pan.
  3. 3
    In a large bowl beat eggs, milk, ketchup, minced garlic, Parmesan cheese; then season with 1 tablespoons seasoned salt, or to taste (or 1 teaspoon white salt or to taste) and pepper.

    Pat half of the mixture into prepared baking pan; set aside.
  5. 5
    To prepare the stuffing; saute the mushrooms, onions and thyme in butter for about 5 minutes, or until tender.

    Add in the breadcrumbs, parsley, then season with salt and pepper to taste; saute until the breadcrumbs are lightly browned.

    Spoon over the layer of the meat mixture in the pan, then press down gently.

    Top with remaining beef mixture.

    Bake at 350 degrees for about 1 hour.

After reading the other reviews, I decided to omit the breadcrumbs (and also I didn't have breadcrumbs). So I used about 1 lb of fresh mushrooms for the stuffing. I omitted the onion. I cooked them in olive oil. Thanks Kit for a tasty meatloaf. And it's very good looking LOL Made for 123 hit wonders.

    I really liked the idea of a stuffed meatloaf. This one was very good. However, I'm not a huge fan of breadcrumbs so will probably double the other ingredients and leave them out next time. I'm a southern girl and we usually top our meatloaf with ketchup so I sorta missed that added flavor but no worries...the bottle was handy. (: All the best in your recovery, Kittencal.

    Just had a slice of this stuffed meatloaf. Since I was serving this as dinner for my guys (students), I wanted to taste it for myself. I sliced it right out of the middle and then pushed it together. (They will never notice!) First, I think step three has to be revised to include the ground beef. I used about 3/4 cup of crumbs mixed into the meat as I was concerned that it would fall apart without it. I also replaced the ketchup with Almost Heinz Barbecue Sauce which I made early in the day. For calorie sake, I sauted the onions/mushrooms in 1 tbls of EVOO instead of butter. I liked this meatloaf! Will try again adding some cooked brown rice and a different type of mushroom (I used white buttons) to the stuffing. Another winner, kitten!
