Date Filled Oatmeal Cookies

This makes a huge batch, cut the recipe in half if desired. These cookies are best if they sit for a couple of days to soften. They freeze well also. From Company's Coming Cookie cookbook.

Ingredients

    Cream butter and sugar together well.

    Slowly mix in milk.
  3. 3
    Add remaining ingredients.
  4. 4
    Mix well.
  5. 5
    Chill for 1 hour.
  6. 6
    Roll out fairly thin on lightly floured board.

    Cut into 2 1/2-inch rounds.
  8. 8
    Place on ungreased baking sheets.
  9. 9
    Bake in 350°F oven for 8-10 minutes.

    Cool.

    Fill with Date Filling, to form a sandwich.

    For date filling: combine dates, sugar and water in saucepan.

    Bring to a boil.

    Simmer, stirring often, until mushy and thickened.

    Add more water if too dry, or simmer longer if too runny.
  16. 16
    Cool and spread between cookies.

    LOVED these cookies! They are one of the best date cookies I have made to date. I am so happy I ran across this cookie recipe. I will be making these for Christmas for my cookie trays from now on!

    I saw the picture of these and had a flash back to my childhood. My grandma used to make these. I have to get some dates this weekend but I HAVE to make these now or I will crave them like crazy. Thanks for the picture memory.

    Wow! what an exceptional treat Martina. These taste just like the cookies my dh's mom use to make. I have hunted high and low for this recipe, since she passed, thanks so much for sharing. My dh is now a happy man, they are his favorite cookies. These delicious, quick and easy, rich, date cookies freeze very well. I used the cookies in my christmas tins this year and everyone asked for the recipe...Kudos Kato
