Famous Butter Chicken

Chicken breasts are dipped in beaten eggs and cracker crumbs, then baked with butter. This chicken is really tender, moist and delicious! A real favorite in my household.

SERVES 4 (change servings and units)

Ingredients

    Preheat oven to 375*F.
  2. 2
    Place eggs and cracker crumbs in two separate shallow bowls.
  3. 3
    Mix cracker crumbs with garlic salt and pepper.
  4. 4
    Dip chicken in the eggs, then dredge in the crumb mixture to coat.
  5. 5
    Arrange coated chicken in a 9X13 inch baking dish.
  6. 6
    Place pieces of butter around the chicken.
  7. 7
    Bake in the preheated oven for 40 minutes or until the chicken is no longer pink and the juices run clear.

What's not to love about this chicken! I sprayed with cooking spray instead of using the butter to cut down on the fat, but we loved it just the same!

    The first chicken recipe that DH did not complain of dryness. Totally worth the bit of work involved. I don't think I could do "plain" baked chicken again after trying this!

    This is a well written recipe that was easy to follow and quick to prepare. It uses ingredients that I always have on hand. I added a little less butter than it called for and added a little paprike to the ritz cracker crumbs. The end result was a very moist, tender and delicious chicken entree.     Very good and quick. Followed the recipe as written except that I turned the chicken over for the last 10 minutes of cooking time.
