This is so simple and easy to make. We have this at work at least once a month. I have made some corrections to the recipe that I failed to add when originally posted. Enjoy.

SERVES 6 -8 (change servings and units)

    Brown ground beef in skillet (with onions and green bell peppers if desired).

    Drain meat.

    Combine all ingredients in large pot and heat through.

    Serve with corn bread or crackers.

Winter is arriving here, in good ol' Maryland style. Kinda cold, kinda sleet, kinda ice. Hummm seems like a perfectly good time to make ~Nimz's~ soup. As it happens quite often, I was missing the minestrone soup, but used "Amy's Vegetable Barley" instead. Other then that, all ingredients stayed the same as I wanted to use this as the way it was written. Already had bell pepper, and onion diced from yesterdays lunch and I threw all the rest ingredients right in to maturate and swim with each other. Dennis came down upstairs sniffing like a little ghost finger had beckoned him down to see where it was taking him. Right into this bowl of soup that was gone in no time flat. I didn't have sour cream, so I added a bit of homemade croƻtons to the top to float a a raft. Yummy! Will make this often ~Nimz~ and thanks!

    This is a very nice soup. Great for after work when time is limited. I halved the recipe and since I used Habitant minestrone soup which is not condensed I didn't add the water. I also included the optional onion.

    Very delicious for a 'not-from-scratch' soup. It was so easy and fast to put together. I made it as written except halved the recipe; and it still made enough for 2 or 3 meals. I added the onion-grn pepper option. Great recipe Nimz.

    This brings back memories of being a girl scout leader and making this at camp. Hearty warming and great tasting. Alone with the onions and peppers I just had to add 2 cloves of garlic. Thanks for the memories!
