Italian White Bean Burrito with Salsa Cruda

Simple seasonings that go together beautifully for a delicious easy lunch or supper.

SERVES 4 (change servings and units)

Ingredients

Salsa Cruda

Burrito

Directions

    In a bowl, add all the Salsa Cruda ingredients together; stir to mix; set aside.
  2. 2
    Place the tortillas on baking sheets.
  3. 3
    In another bowl, add the beans, garlic, and cheese; stir to combine.
  4. 4
    Spread the bean mixture onto the four tortillas, leaving a 2-inch border.
  5. 5
    Heat in a 425° oven for 3-5 minutes or just until the cheese melts.

    Spoon the Salsa Cruda evenly over the bean mixture on each tortilla.
  7. 7
    Place basil leaves over the salsa cruda on each tortilla.
  8. 8
    Roll up tortillas and serve immediately.

Well, I somehow wrote this down all wrong, and just mixed everything except the tomato and vinegar together in a bowl and ate the mixture in a pita with tomato slices AND IT WAS GOOD! Can't wait to try it the right way. Great combination of flavors! Thanks for the recipe.

    Excellent recipe which everyone in our household enjoyed including the toddler! However double the recipe at least as these are pretty popular!
