Churros de Pescado (Fried Fish Fingers)

Another one of my Canary recipes...this works well with any kind of white fish. Cook time is per batch.

SERVES 6 (change servings and units)

Ingredients

    In a large bowl, combine garlic, parsley, beer, flour, baking powder, saffron and salt with a whisk until well blended, and there are no lumps.

    Heat sunflower oil to medium high heat in a deep frying pan.
  3. 3
    Dip pieces of fish in batter and fry until golden, (about 2-4 minutes each side, depending on the thickness of the fillet) turning once.

    Drain on paper towels and serve with garlic mayo and lemon wedges.

    I made this batter tonight for cod fingers, and everyone loved it. It was nice and crispy without being too heavy. Very nice. I ended up using it on onion rings too, which were excellent. I didn't have saffron, so I skipped it. This will definitely replace the batter I usually use. Thanks for a great recipe.

    I made these sometime at the beginning of the month and totally forgot to review! My parents came to get me from NC, and I made dinner for them the night before we left We had these fish fingers and some spicy potato wedges. Fabulous fish fingers. The flavor is wonderful! I used the beer Thanks for the recipe CG!
