Blueberry-Nut Mini Loaves

These mini loaves bake out nice and high, the applesauce and cream makes these soooo moist! You can use cranberries in place of blueberries if desired.

4 small loaves (change servings and units)

    Set oven to 350 degrees.

    Grease four mini loaf pans.
  3. 3
    In a large bowl cream butter with sugar until fluffy.
  4. 4
    Add in eggs and vanilla and beat until completely blended,.
  5. 5
    In a small bowl whisk/combine the applesauce with whipping cream until blended.
  6. 6
    In another bowl sift together flour, baking powder, baking soda and salt, then add to the creamed mixture along with the applesauce mixture.

    Add in blueberries and walnuts; mix to combine.
  8. 8
    Transfer to mini loaf pans.
  9. 9
    Bake for about 30-35 minutes, or until they test done.

What I love about making mini-loaves is that I"m able to share w/others. These are absolutely scrumptious little delights. Very moist and full of blueberries. I omitted the nuts per families request. TY Kitzey~~~ Made for 123HitWonders!

    These came out wonderfully moist, chock full of blueberries & have just the right amount of walnuts. I added in 2 teaspoons of vanilla & 2 teaspoons of cinnamon; the applesauce really adds a lot of flavor.Thanks for another EXCELLENT recipe!!
