Gorgonzola and Toasted Walnut Salad

Recipe #66268 | 20 min | 15 min prep | SERVES 6 (Change Servings)

RECIPE BY: Hey Jude

This salad couldn't be simpler and will be a hit with blue cheese lovers. Pecans can be substituted for the walnuts. Cooking time is for the time it takes to toast the walnuts in a 325 degree oven for a few minutes.

Posted on: Jul 7, 2003

Ingredients

  • 10 ounces mesclun or baby greens, washed and dried
  • 3/4 cup gorgonzola, finely crumbled
  • cup walnut, toasted and coarsely chopped
  • Dijon Vinaigrette

    2. 2
Combine and whisk together dressing ingredients.
    3. 3
Toss salad with enough dressing to coat but avoid over-dressing.
    4. 4
      Serve.

Great salad dressing...the salad was very good too. Made this for Christmas for those that were watching their waistlines and it was gone. We made extra dressing and used it for the duration of the week...we did half the EVOO. It was still flavorful. thanks Jude
