Super Baked Beans

I got this recipe from one of my Better Homes & Garden cook books. My family loved it the first time I made it. I just estimated the prep time. Try it.

SERVES 10 -12 (change servings and units)

    Rinse beans.
  2. 2
    In a 4 1/2 quart Dutch oven combine beans and 8 cups cold water.
  3. 3
    Bring to boiling, reduce heat, simmer for 2 minutes.
  4. 4
    Remove from heat, cover and let stand for 1 hour.
  5. 5
    (Or, skip bioling the water and soak beans overnight in a covered pan.) Drain and rinse beans.

    In the same pan combine beans and 8 cups fresh water.
  7. 7
    Bring to a boil, reduce heat.
  8. 8
    Cover and simmer about 1 1/4 hours or till tender, stirring occasionally.

    Drain beans, reserving liquid.
  10. 10
    In a 2 1/2 quart casserole or bean pot combine the beans, bacon and onion.

    Stir in 1 cup of the reserved bean liquid, the molasses or maple syrup, brown sugar, dry mustard, salt, and pepper.

    Bake, covered, in a 300 degree oven about 2 1/2 hours or to desired consistency, stirring occasionally.

    If necessary, add additional reserved bean liquid.

We all enjoyed these beans and 'licked the platter clean'. When I tasted part way through cooking I felt the molasses overwhelmed the other flavours so I added in 1/2 cup ketchup to mellow it out a bit. I would certainly add the ketchup next time. We got rave reviews. I served Reciope #116185 with it. Thanks for sharing your recipe.

    I made this Recipe for the ZWTII. This recipe is like our family favorite, the only difference is we use Pork n Beans and add a little Ketchup! But these Beans were also delicious and went over great with our Hamburgers! Thanks!

    I must admit, I skipped the whole dry bean soaking,cooking, and used canned beans(kidney). I halved the recipe and loved the way it turned out, thanks!

    I made these tonight to go with hot dogs and they were a big hit with my family. I used bacon and molasses and they turned out great. We have the leftovers to look forward to as well! Thanks!
