Here's a quick, great party pleaser I've made for years which has a lot of variability. It's really simple and goes well with beer and soft drinks at neighborhood or family gatherings.

SERVES 6 -8 , 25 -30 appetizers (change servings and units)

    Pat dill pickle dry with paper towel.
  2. 2
    Take 2-3 pieces of meat (depending on size of pickle), and place them on a cutting board overlapping half of each with the next. (If you're lucky, you can find the ham cut in a rectangular shape as opposed to square. In this case, you can use just one slice and it will encase the entire pickle.)

    Spread cream cheese over meat.
  4. 4
    (You can use more cream cheese if you like.) Wrap pickle around in blanket fashion.
  5. 5
    Chill for an hour or two, then slice pickle in~1/2 inch pieces and lay flat on tray.

    (If using dried beef, you can also put meat in blender and pulverize. Spread cream cheese on dried pickle then roll in pulverized beef. Again, allow to refrigerate 1-2 hours and slice as above.).

I LOVE these! I first had these in high school and was forced to try them. It sounds like a weird combo but yummy! I can't make a plate unless I have somewhere to take them or I will eat them all myself. I usually use ham and baby dill pickles.

    My family has made these every year on Christmas Eve for as long as I can remember. They are absolutely fabulous. We always use baby dill pickles, slice the dried beef to the approximate length of the pickle, and roll each one - no cutting involved. Great fun for the little ones and wildly addictive! Sodium at its finest.

    Yum - we have been making these for years and love them. We use the midget polish dills and dried beef. We spread the softened cream cheese on the dried beef then roll it around the pickle.

    Okay. I make these and always get looks, but then after one bite they are under my spell!! I USE TONS OF CREAM CHEESE!! The more the better!! I can usually use a block and a half of cream cheese and a whole jar of the refridgerator pickles (Vlasic Hearty Garlic whole Kosher Dills) I also use dried beef, but I do not shred it - I just wrap it around the pickle. I put the cream cheese on the pickle instead of on the meat. Seems to work for me! Enjoy! You will not regret it...anyways, this is what I always say...a recipe with cream cheese...well, that is just a good recipe!!!
