Easy Lemon Cheesecake Bars

This came from a summertime cook book.It goes well with cookout type food and is easy to make.

Ingredients

  • 1 yellow cake mix with pudding
  • 2 egg
  • 1/3 cup oil
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup sugar
  • 1 1/2 teaspoons lemon juice
  • Directions

    1. 1
      Mix together dry cake mix, 1 egg and the oil, until crumbly.
    2. 2
      Set aside 1 cup of this mixture.
    3. 3
      Pat remaining mixture into bottom of ungreased 9x13 pan.
    4. 4
      Bake at 350 for 15 minutes.
    5. 5
      Remove from oven.
    6. 6
      In bowl, beat together cream cheese, sugar, lemon juice and remaining egg until smooth.
    7. 7
      Spread over baked crumb mixture.
    8. 8
      Sprinkle remaining crumb mixture over that.
    9. 9
      Return to oven for 15 minutes.
    10. 10
      Cool in fridge and cut into bars.

    These were delicious. Made them for the holidays and they got great reviews. I'd like a little bit thinner crust, but that would be easy enough to cut back on. Thanks for posting!

    I can't believe I never rated this recipe. This is a recipe that my family has used for a long time. Delicious, lemony, cheesecakey, crumbly- what more can you ask for? You can easily sub Neufchatel cheese for the cream cheese without messing up the flavor.

    These are great angelfan!! Made a batch this afternoon for DH since he loves cheesecake things! I couldn't believe how easy they were, and yet they were so very tasty! I've got to pick up more cream cheese tomorrow and make another batch for the freezer. Thanks for sharing!
