Grilled Chicken-Blueberry Salad

I love blueberries-this is a great recipe to use them is something other than muffins and jam!

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    In a medium bowl mix together the oil, vinegar, ginger, garlic, salt and pepper.

    Divide and chill one half.
  3. 3
    With the remaining mixture pour into a plastic bag and add the chicken breasts.
  4. 4
    Seal and chill for 2 hours to overnight.
  5. 5
    Preheat grill to 350 degrees.
  6. 6
    Remove chicken from marinade-discard used marinade.
  7. 7
    Grill chicken for 6-8 minutes on each side, checking to make sure chicken is done and no pink is remaining inside deepest part of meat.

    Cut into thin slices.
  9. 9
    Place greens on a large serving platter.
  10. 10
    Mix together the celery, onion, peppers and carrots.

    Toss together with the reserved vinegar mixture.
  12. 12
    Place chicken slices on the greens, dress with the vinegar/vegetable mixture, and top with the blueberries.

    Serve.

My family loved this salad. The blueberries are not an essential part, however, and we are planning to try dried cranberries the next time. Don't forget that the chicken breasts need to marinate. We had a late dinner since I failed to read the recipe thoroughly early in the day.

    I made this salad for my wife, daughter, and grandson. Nothing but raves. None of them like ginger so I left it out. Very easy to make and put together. While I was letting my grilled chicken set I assembled the salad. They are already thinking about using strawberries, Granny Smith apples, etc.

    If you like rice wine vinegar and freshly grated ginger, you're gonna' love this salad because it's got LOTS of both. Loved the dressing as a marinade on the chicken but it was pretty tangy on the salad. A very attractive salad, DiB.
