Baked Lima Beans

I got this recipe from the Mount Joy Mennonite Church cookbook. Very good! Mount Joy is in Lancaster County, PA. Prep time does not include overnight soaking of beans. Cook time is approximate.

SERVES 8 -10 (change servings and units)

    Soak beans overnight.

    Cook in water until just about half tender; drain.
  3. 3
    Add other ingredients.
  4. 4
    Bake in oven until tender, 2 to 3 hours at 350 degrees.

This makes a ton, but I have to say that I didn't think it was anything more exciting than canned baked beans.

    This is a great tasting recipe!!! Instead of the bacon I had some ham left over and used that with the beans. My family loved it. I used half of ingredience to make a smaller portion, as suggested. This recipe is right on the money. Thanks again Chris
