60 Sec. Chocolate Oat Peanut-Butter Cookies!

Ohh, one of my favorite quick sweet recipes! When I was about 10, I was at a friend’s house and the mother made a few batches of these. When my ma picked me up, I had her taste one and she HAD to get the recipe. These are SOOOO good! They are quite addicting though hehe…you may need a few batches! 8)

SERVES 20 -45 (change servings and units)

Ingredients

Directions

    Have all ingredients measured and ready.
  2. 2
    Place sugar, milk, butter and the cocoa in pan.
  3. 3
    Bring to boil.
  4. 4
    Boil for 1 minute. Remove from burner.
  5. 5
    Quickly, stir in the quick oats, peanut butter, and vanilla extract.
  6. 6
    Drop onto wax paper by round teaspoonfuls.
  7. 7
    Leave to stand approximately 1/2 hour.

Quick to make. Need to be kept in the freezer in our tropical climate but good for something a bit different.

    Very quick and easy to put together, DH likes them, they're not my favourite. They didn't stay together after 30 minutes, I had to put them in the freezer to harden them up, then they were ok. I got 46 cookies and they will look nice on a holiday platter.

    I tried making a version of these with soy butter, as I have a nephew who is alergic to wheat, peanuts and eggs - which makes it really hard to bake cookies for him! It worked perfectly- and they taste great. Have to work fast thought - they set up faster and firmer with the soy butter.
