Easy Black Bean Soup

This soup is a favorite pantry meal for my family. Easy, easy, easy to make and nutritious. I got the recipe from the back of a soup can but have improvised this soup many times. Feel free to adjust seasonings as you like.

Ingredients

  • tablespoons olive oil
  • medium onion, chopped
  • tablespoon ground cumin
  • 2-3 cloves garlic
  • 2 (14 1/2 ounce) cans black beans
  • cups chicken broth or vegetable broth
  • salt and pepper
  • small red onion, chopped fine
  • 1/4 cup cilantro, coarsely chopped or finely chopped (whatever you prefer)
  • Directions

      Saute onion in olive oil.

      When onion becomes translucent, add cumin.
    3. 3
      Cook 30 seconds, then add garlic and cook for another 30 to 60 seconds.

      Add 1 can black beans and 2 cups vegetable broth.

      Bring to a simmer, stirring occasionally.

      Turn off heat.

      Using a hand blender, blend the ingredients in the pot, or transfer to a blender.

      Add the second can of beans to the pot along with blended ingredients and bring to a simmer.

      Serve soup with bowls of red onion and cilantro for garnish.

      I add a bit of cilantro to the pot, too.

      Can be doubled or frozen.

    What can I add to the already 5-star ratings? Everyone raved about this soup, served a day after I made it. Only thing I changed was to put some roma tomatoes (cut in chunks) into the pot during the last simmering, and I cooked my own black beans. Wonderful soup!

    quick, easy soup without all the ingredients so many other black bean soups call for. i didn't have any cumin, so used chili powder instead, which worked great.

    I used chicken broth in this soup and increased the amount of cumin. Topped with red onion and cilantro, this is a perfectly simple soup with tons of flavor. It is a great bonus that the prep was so simple.

    This soup is delicious and so easy to make! I will use a can of tomatoes next time also. I added an extra clove of garlic and I may decrease the amount of cumin just a bit, but this is just my personal taste. Delicious with tortilla chips! I cannot get over how quick it was to make it!
