This is a great substitute for the real thing if you are on a low carb diet like Atkins. Good way to get your veggies too,even if you don't like cauliflower.

SERVES 2 (change servings and units)

Ingredients

Directions

    Steam or microwave cauliflower until Very soft.
  2. 2
    Put cauliflower in blender or food processor with butter and sour cream.
  3. 3
    Process or blend until creamy like mashed potatoes.
  4. 4
    Add seasonings to taste and serve immediately.
  5. 5
    Grated cheese or minced chives make a nice topping.

Oh my! I'm sorry to say but my entire family thought that this was inedible! My DH, who eats everything, had to spit it out. Terrible flavor and texture. I through it in the trash. It was easy but we will definitely NOT be having this again.

    Sometimes the simplest methods are the very best. I have tried so many faux-tato recipes, and have ended up with many a disaster. This was so great- so easy and creamy and good. Here's what I did in less than 5 minutes (not including steaming time.) I used the Steamfresh frozen cauliflower that is seasoned. It mashed up perfectly for enough for 2 people using the sour cream, butter that is mentioned in the recipe. I used the Magic Bullet. SO EASY!!! Thanks x100.

    I have been doing the low carb thing on and off since 1999 so these 'fauxtatoes' are not new to me. This is a wonderful recipe! My family will not eat the real things anymore. Hints-use a 2 oz.chunk of cream cheese versus the sour cream to make them less watery, and an immersion blender works great for pureeing into glorious peaks of white. I especially like these served with Mille's Boston Market Meat Loaf-#28927. MMMMM good.

    While I'm not on any type of diet, this still made a wonderful side dish!!! I tripled the recipe and glad I did because it disappeard. I seasoned it with salt, pepper and garlic powder. This is a different way to prepare cauliflower...we loved it! Thanks for sharing.
