Kielbasa With Tomatoes and White Beans

A Polish-Italian quick fix main dish!

Ingredients

  • 1-2 tablespoon oil or butter
  • lb smoked kielbasa, sliced 1/2 inch thick
  • small onion, chopped
  • 2 garlic clove, minced
  • 1/2 teaspoon dried rosemary, crushed
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 (14 1/2 ounce) can peeled diced tomato
  • 1 (16 ounce) can great northern bean or navy bean or cannellini beans, drained
  • Directions

    1. 1
      Heat oil or butter in a large skillet, add Kielbasa and cook over medium high heat until lightly browned, remove with slotted spoon.
    2. 2
      Reduce heat to medium, add onions and cook until transparent.
    3. 3
      Reduce heat to low, add garlic and herbs and cook 1 minute.
    4. 4
      Add kielbasa, tomatoes and white beans, bring to a boil, reduce heat and simmer 10 minutes.

    Delicious! I added a large handful of baby spinach leaves and 1/4 cup white wine for the last 10 minutes of simmering. The cannellini beans were a great addition. We added a few drops of hot pepper sauce and some black pepper to our servings for a bit of zip. Thanks Lorac.

    Another 5-star review! My partner and I just loved this. Like others, I tried to make it a little more healthy by not adding additional oil to the pan as the sausage rendered enough to saute the onion. I also added one bunch of spinach. I also added 1/2 cup of dry white wine to thin a bit. We ate this with a loaf of crusty whole grain bread as though it were a stew. Thank you Lorac!

    I took another reviewer's suggestion and added spinach, but went a step further and sprinkled mozzarella atop each serving. I also substituted thyme for rosemary and didn't remove the meat to cook the onions. I will definitely make this again, but add another can of beans to balance out the meat and stretch it further. Thanks for an easy and super delicious recipe!

    I love anything with kielbasa, and this is excellent. The seasoning was perfect and not over powering. Added some chopped fresh spinach at the end. It plated up really nice with the colors of the veggies. Great with a good bread.
