Asparagus Casserole

A delicious way to serve asparagus to your guests. It can be prepared ahead, refrigerated, and baked while your guests enjoy an appetizer!

SERVES 12 , 1 9x13x2 casserole (change servings and units)

Ingredients

    Drop fresh asparagus into boiling water.
  2. 2
    As soon as they turn"bright" green, remove and plunge them into ice water to stop the cooking process.

    Drain.
  4. 4
    Mix soup and milk together.
  5. 5
    Place asparagus in 9x13x2-inch casserole.
  6. 6
    Top with sliced eggs.
  7. 7
    Sprinkle with crackers; sprinkle with cheese.

    Pour soup mixture over casserole.
  9. 9
    Bake at 350 degrees until hot, just bubbling and cheese is melted.

    NOTE: For a spicier version my family really, really likes, I use Cheez-its (Hot and Spicy) crackers instead of the butter-flavored crackers mentioned above. I usually add a few more crackers than the original recipe calls for.

Oh no, Beth! What did you expect this dish to taste like, if it contains TWO bunches asparagus and FOUR hardboiled eggs? Lemon meringue?? BeachGirl, this was a lovely side dish. We love asparagus, and I used 2 bunches green asparagus (cost me a fortune, LOL!) I used a local (SA) type cheesy cracker. We really loved it — a comforting side dish which I served with plain fried prawns (large shrimp). Thank you!!

    YUK! I made the recipe as stated and it tasted like asparagus and eggs. We didn't like it at all. It is not near enough liquid. I will not make again.

    Fantastic. I love asparagus and was looking for a new twist. This is it and I will make plenty more of it. I was not sure about the eggs, but it is a perfect combination. I omitted any extra seasoning as the crackers already have salt, and it came out great. It is also a recipe that you can easily prepare in advance for entertaining and just bake it in the oven.

    My family and I loved this. I made it for Thanksgiving. They requested it for Christmas. It's a very nice alternative to the traditional green bean casserole.
