Erna's Apple Pie Muffins

When our first daughter was born, a friend brought us a pail of these delicious muffins. It was such a thoughful gesture and perfect to snack on during that first couple days at home. Whenever I make these now I can still "taste" those first new days of motherhood. Thank you Erna!

Ingredients

  • Topping

    Batter

    Directions

    1. 1
      Topping-mix all together, until mixture forms crumbs.
    2. 2
      Batter- Whisk together egg, buttermilk, butter, and vanilla.
    3. 3
      Stir in sugar.
    4. 4
      Without mixing, add flour, baking soda, salt and apples.
    5. 5
      Stir just until combined.
    6. 6
      Do not over mix.
    7. 7
      Spoon into muffin cups.
    8. 8
      Sprinkle with the topping.
    9. 9
      Bake at 375 degrees F for 20 minutes or until firm to the touch.

    I made this for breakfast today and they were very quick to put together. I didnt have a lot of brown sugar so i used white sugar in the muffins and they turned out very yummy and juicy. But i didnt care for the topping too much and i think i wont be making it next time. Plus the muffins are equally delicious without it.

    Yummy muffins! I only used one cup of brown sugar in the batter and they were still pretty sweet. I also added a teaspoon of cinnamon to the batter as well. The only thing I'd complain about is I had a LOT of topping left over. Maybe half it next time!
