Hot Chicken Salad Sandwiches

A deliciously different Make-Ahead hot sandwich. Easy to prepare and requires just 20 minutes to bake. Cut in quarters for appetizers.

SERVES 6 , 6 sandwiches (change servings and units)

Ingredients

Directions

    Trim crust from bread.
  2. 2
    Mix butter and cheese together and spread on the bread slices.
  3. 3
    Mix together chicken, eggs, olives, onions, and mayonnaise.
  4. 4
    Spread mixture on 6 slices of bread.
  5. 5
    Place remaining bread slices, cheese side up, over the chicken filling.
  6. 6
    Place sandwiches in single layer on large baking sheet.
  7. 7
    ***Torefrigerate for later baking, cover with plastic wrap and refrigerate now.

    ***Preheat oven to 400 Degrees.

    Heat sandwiches, uncovered, for about 20 minutes or until hot and cheese topping melts and bread is toasted.

These sandwiches were a nice way to use up leftover roasted chicken. I omitted the celery and used salad dressing instead of the mayo (just what we prefer)and put it in buns instead of sandwich bread. It's a very tasty sandwich. Because I now know that my husband doesn't like his bread that crunchy, I'll wrap the sandwiches up in foil and then unwrap mine for some crunch. It could be different if using the sliced bread instead of buns -so I might have to try it that way too so I really know. Thanks for sharing.

    Beach girl, these were so good, and so easy! My family enjoyed them so much. I made a double batch and they disappeared! I did throw in some green onion, just because I add green onions to everything! The olives were a unique addition. I like the crunchiness of the bread around the creamy filling. Thanks for a great recipe!
