Balsamic Chicken and Mushrooms

This is a quick, easy, and elegant WW recipe that is suitable for entertaining. (4 Points)

SERVES 4 (change servings and units)

Ingredients

Directions

    In a nonstick skillet, heat 1 teaspoon of the oil.
  2. 2
    In a bowl, mix 2 tablespoons of the vinegar, the mustard and garlic.
  3. 3
    Add the chicken and coat both sides with the mixture.
  4. 4
    Transfer the chicken and mixture to the skillet; saute until cooked through, about 3 minutes per side.
  5. 5
    Transfer to a plate and keep warm.
  6. 6
    In the skillet, heat the remaining teaspoon of oil.
  7. 7
    Saute the mushrooms about a minute; add the broth/wine, thyme and remaining tablespoon of vinegar.
  8. 8
    Cook stirring until the mushrooms are deep brown, about 2 minutes longer.
  9. 9
    Serve the chicken, topped with the mushrooms.

This was fabulous! My picky husband even said he would love me to make this again soon! I used white wine. I also sliced my mushrooms which turned out great. I used two large garlic cloves as well. This is super yummy! You won't be disappointed!

    An elegant meal in minutes. To make this even quicker, I sliced my chicken breast into 1/4 slices and skipped the pounding. Sliced the mushrooms as well to make the shapes fit together. Different look to my dish but the same great take. Other than add a little extra thyme (which I love) I wouldn't change a thing here. Thanks!

    This was delicious - quick & easy to prepare! I scaled the recipe for 2 people (no problems), used extra garlic, chicken broth & sliced the mushrooms. Thanx Norma!
