"Fool the Meat Eaters" Chili

This recipe was adapted by my mother and myself from meat chili. We fed it to my dad and only told him afterwards it wasn't meat - he couldn't tell the difference! This is a fast and filling meal and is even better, cold or warm, the next day! I serve leftovers with tortilla chips or in a wrap. Also good with sour cream and/or cheese on top.

SERVES 4 -6 (change servings and units)

Ingredients

    Rehydrate TVP if needed.
  2. 2
    Spray or oil a large pot.
  3. 3
    Chop the onion, hot peppers (if using- it is best to wear rubber gloves when cutting the hot ones!), and garlic and add to the pot.

    Chop remaining vegetables, add to pot and brown lightly.
  5. 5
    Add remaining ingredients; stir well and simmer at least 15 minutes.
  6. 6
    Taste (This is important!) Adjust spices to taste.
  7. 7
    Simmer an additional 15 minutes or so.
  8. 8
    Serve with garlic bread, toast, or on rice.

Correct me if I'm wrong, but I think the directions should read 1 1/2 cups of rehydrated TVP, not 1 1/2 cups TVP rehydrated. I only add a portion of the TVP stated as the chili looked entirely too thick more like a casserole than a chili. The result was also a little bland so I added some extra chili powder and 1 tsp of cumin. Though the final dish was fine, no one was fooled. will continue to experiment with this recipe as it has great possibilities.

    This was THE BEST chili I have ever made and/or eaten! This was the first vegetarian chili I have tried and I certainly could not taste a difference without the real beef. The only adaptations I made is that I substituted the celery for one chopped green bell pepper because I don't really care for cooked celery. And what did I get? The best chili ever!!!! Definitely will make this again and again.

    My whole family loved this recipe which happens to include two very serious carnivores. Plus it's easy to make. We added 1/2 tsp cumin and oregano for some extra spice.

    Excellent vegetarian chilli that everyone enjoyed. I did cut down the chili powder to a heaped tsp for a mild chilli as my toddler was eating this. Went down an absolute treat.
