Hominy Casserole

My grandmother used to make this recipe. She got it from a ladies cookbook in Lubbock, Texas. My mom made it, and now I make it. It is a family favorite!

Ingredients

  • 2 (14 ounce) cans yellow hominy, drained
  • cup grated cheddar cheese
  • 1 (4 ounce) can chopped green chilies, drained
  • 1 (8 ounce) carton sour cream
  • small onion, chopped
  • salt, to taste
  • pepper, to taste
  • Directions

    1. 1
      Mix all ingredients except the cheese.
    2. 2
      Pour into 8 or 9" baking dish.
    3. 3
      Sprinkle grated cheddar cheese on top.
    4. 4
      Bake at 350 degrees for 25 minutes or until cheese is thoroughly melted and sides of casserole are bubbling.

    Very different. Had this with supper last night and it came together quickly and nicely. We really liked the cheese on top! We did find it needed salt. DD added some salsa to it on her plate and that made a great combo. Thanks for a great and different side dish!

    I have made this recipe many times, and it is always a favorite.....if you like hominy. I usually use frozen green chiles, as they are just a bit hotter than the canned. Sprinkle some pure chile powder, or cayenne on top for a lovely garnish. Thanks for sharing this recipe. Definately a keeper!

    another recipe that i forgot to review. i HATE!!!! chopping onions so i generally don't put them in recipes. this easy and delicious, creamy with a zing from the green chiles. DH does not like hominy, but scarfs down this recipe. i use shredded 2% mexican blend cheese instead of the cheddar, and low fat sour cream. great recipe!!!!
