MaMa's Supper Club Tilapia Parmesan

Ingredients

  • lbs tilapia fillet (orange roughy, cod or red snapper can be substituted)
  • tablespoons lemon juice
  • 1/2 cup grated parmesan cheese
  • tablespoons butter, room temperature
  • tablespoons mayonnaise
  • tablespoons finely chopped green onion
  • 1/4 teaspoon seasoning salt (I like Old Bay seasoning here)
  • 1/4 teaspoon dried basil
  • black pepper
  • dash hot pepper sauce
  • Directions

    1. 1
      Preheat oven to 350 degrees.

      In buttered 13-by-9-inch baking dish or jellyroll pan, lay fillets in single layer.

      Do not stack fillets.

      Brush top with juice.

      In bowl combine cheese, butter, mayonnaise, onions and seasonings.

      Mix well with fork.

      Bake fish in preheated oven 10 to 20 minutes or until fish just starts to flake.

      Spread with cheese mixture and bake until golden brown, about 5 minutes.

      Baking time will depend on the thickness of the fish you use.

      Watch fish closely so that it does not overcook.

      Makes 4 servings.

      Note: This fish can also be made in a broiler.

      Broil 3 to 4 minutes or until almost done.

      Add cheese and broil another 2 to 3 minutes or until browned.

    Fantastic!!! Very easy to make, great tasting. I broiled it following the instructions on the recipe. Used 1 tablespoon of butter and 3 tablespoons of olive oil and regular onion and chopped garlic. Thanks

    This was a great recipe! I really enjoyed it last night and it went great with baked potatoes. I had to cut the recipe in half because I had less fish but the baking time still worked because of their thickness. I also used less butter, less mayo, and less onion (1 T each). I also used yellow onion instead of green onion which I liked better. I also added lemon zest in addition to the lemon juice which helped create a more lemony flavor which my family and I enjoyed. One thing I may experiment with next time is using shredded Parmesan instead of grated Parmesan. This could give it a richer, cheesier, and meltier flavor. I think that I didn't need to cut the recipe in half because then I could have covered my fish even more. The one weird thing was that my Tilapia topping didn't turn out quite as brown and even which could mean that it needed more than 5 minutes.

    WOW! Outstanding flavor for a mild fish like tilapia. My fillets were thin, so I baked them the minimal time, and the sauce baked on nice and golden and quite delish. Of the 7 fillets we had, DH inhaled 5, good thing the kids had made other plans. Will most definitely be making again so the kids can savor as well.

    I'm new at cooking Tilapia and found this recipe very good. I had a little less than one pound of fish but still used the same amount of cheese topping and it turned out great. I baked the fish for about 15 minutes and then put it under the broiler for 5 minutes to brown the cheese. The only change I would make is to reduce the amount of butter to 2 T. (personal preference)and maybe try it with fresh basil. Very nice flavor and easy to prepare.
