Fruit Salsa with Cinnamon Tortilla Chips

Kids love this recipe for an after school snack or for breakfast. I also serve it as a dessert in a bowl over a small scoop of vanilla ice cream with the chips on the edges. This is a light and healthy recipe that I found on recipe-a-day.com

SERVES 6 (change servings and units)

    In a large bowl, toss the chopped apples with the lemon juice.

    Add the strawberries and the kiwi.
  3. 3
    Grate about one tablespoon of orange peel (not the bitter white pith) into the fruit.
  4. 4
    Slice the orange in half and squeeze out about 3 tablespoons of the orange juice into the fruit mixture-- no seeds please.

    Stir in the brown sugar, and the jelly.
  6. 6
    Set aside.
  7. 7
    Brush the tortillas with a tiny bit of water to allow the sugar and cinnamon to stick.

    Mix the granulated sugar and cinnamon together and sprinkle on the tortillas, turning to cover both sides.

    Cut each tortilla into 8 equal wedges.

    Place all the wedges on a greased baking sheet or sheets, in a single layer Bake in a preheatedd 400 degree oven for 6 minutes or until lightly browned.

    Cool until crisp, then serve with the apple salsa.

I love this recipe!! I usually only make 1/2 of what is listed, and it makes a good amount. I use a small counter chopper for the apple, and strawberries. I hand chop the kiwi and a can of mandarin oranges. For the chips, I usually get a pack of 12 tortilla. Using kitchen shears I cut them and line a baking sheet with the pieces. To speed the process, I use a spritzer bottle of water to wet only one side and then loosely sprinkle sugar and cinnamon to my liking. This is a great summer snack that always gets rave reviews!

    I made this for lunch, so easy & so yummy, I love the apple jelly glaze. I didn't have any tortillas but some leftover Indian chappati bread which is similar & I used that for the crisps only coating one side which I found enough. Thanks for a great recipe. Made for ZWT III.

    I made this for my family and the fruit salsa was good, but the chips were a bit too sweet. Maybe next time try only putting one side with cinnamon sugar, instead of both.

    Fantastic! My kids love this, and it is a definite pleaser at any summer gathering. For heat (for serving adults) I use hot-pepper jelly to give it a kick. Thanks for posting!
