these were SO yummy! I was out of eggs so i made these vegan by using 2 flax eggs and non fat soy milk. i replaced most of the oil with applesauce and added vanilla and cinnimon. They tasted amazing! Thank you for the recipe!

love it! the oats give a nice crunch to the pancakes. i used 2 cups of oats, let them stand a bit longer, and had no problem whatsoever with runny batter. thanks for the recipe!

The kids couldn't decide if they wanted oatmeal or pancakes...they got both and everyone was happy! I don't even especially like pancakes but I loved these. They have a wonderful chewy, nutty taste and texture and the whole house smells like oatmeal muffins while they're cooking. Very filling, too. I added a little ground flax and cinnamon, which added an extra richness. I had huckleberry syrup on mine and it was good enough for dessert. (Looks like everyone likes the fruit on top!) I think next time I may try subbing applesauce for the oil...lower fat and the flavors would blend well. I have a feeling we'll be having this a lot - thanks!
